Ingredients

  • 2 rabbits, cut up
  • 1 cup flour
  • salt and pepper
  • 3 to 4 teaspoons olive oil
  • 1/2 cup sliced onion
  • 4 garlic cloves, sliced
  • 13 oz. can tomato sauce
  • 3 bay leaves
  • 3/4 cup red wine
  • 1/4 cup green olives
  • 1/4 cup black olives

Instructions

  1. Place rabbit pieces in a bag with flour, salt, and pepper to coat.
  2. Sauté sliced onion in 3 to 4 teaspoons of olive oil until soft.
  3. Push the onions aside and add rabbit pieces; brown on all sides.
  4. Add sliced garlic, tomato sauce, bay leaves, and red wine. Cover and simmer for 45 minutes.
  5. Add green and black olives; continue simmering until the meat is tender.
  6. If the sauce does not thicken, mix a little flour and water, then stir into the sauce and cook until thickened.
  7. Serve the stew over rice.
