Ingredients

  • 3 cups diced cooked rabbit
  • 2 cups diced cooked vegetables
  • 1/2 cup chopped onion
  • 1/4 cup chopped green pepper
  • 1/4 cup margarine
  • 1/4 cup flour, sifted
  • 2 cups rabbit broth or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic
  • 1 tablespoon parsley flakes

Instructions

  1. Heat margarine in a large frying pan. Add chopped onion and green pepper.
  2. Cook over low heat for 5 minutes until vegetables are softened.
  3. Blend in sifted flour and cook until bubbly.
  4. Gradually pour in rabbit or chicken broth, stirring constantly to prevent lumps.
  5. Cook until the mixture thickens and becomes smooth, stirring frequently.
  6. Add salt, pepper, minced garlic, and parsley flakes to season the gravy.
  7. Add diced cooked rabbit and vegetables to the gravy and heat through.
  8. Pour the filling into a prepared pie crust.
  9. Cover with the top crust, cut slits for steam to escape, and seal the edges.
  10. Bake at 425°F until the crust is golden brown and the sauce bubbles.
