Ingredients

  • 1 rabbit, cut in pieces
  • 1 big onion, chopped
  • 1 laurel leaf
  • 1 tsp thyme
  • 1 Tbsp vinegar
  • 2 Tbsp maizena
  • 33 cl dark abbey-beer

Instructions

  1. Burnish the pieces of rabbit with salt and pepper in butter.
  2. Add the beer, water, and vinegar to the rabbit pieces.
  3. Add the chopped onion, sugar, thyme, and laurel leaf.
  4. Let everything simmer for about 1 hour.
  5. Thicken the sauce with maizena (cornstarch).
  6. Serve with boiled potatoes and apple compote.
