Ingredients

  • 4 qt. sliced cucumbers
  • 3 green peppers (mangos)
  • 1 red firm mango
  • 4 onions, sliced
  • 1 tsp. salt
  • 1 tsp. turmeric
  • 1 tsp. celery seed
  • 3 c. sugar
  • 2 c. vinegar

Instructions

  1. Combine sugar, vinegar, salt, turmeric, and celery seed in a saucepan.
  2. Mix until the sugar dissolves completely.
  3. Add the sliced cucumbers, green peppers, red mango, and sliced onions to the pan and mix thoroughly.
  4. Bring the mixture to a boil while stirring.
  5. Pour the hot mixture into sterilized jars and seal immediately.
  6. Do not boil over 2 minutes to maintain vegetable firmness.
