Ragout Raleigh

- In a very heavy skillet, arrange half strips of bacon over the bottom.
- Cut the round steak into strips and cover the bacon with the strips.
- Add salt and pepper to taste.
- Cover the meat with sliced carrots and onions, then top with very thinly sliced potatoes.
- Add salt, pepper, and parsley flakes.
- Cover and cook over very low heat for 2 to 2 1/2 hours, until done.
- Do not lift the lid unless the cooking is too fast and needs a little water.
- It can be cooked longer if necessary, just ensure it remains on low heat.
