Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 1 egg
  • 1/2 cup powdered sugar
  • 3 cups miniature marshmallows
  • 1/2 cup walnuts
  • 1 cup flaked coconut

Instructions

  1. Melt the semi-sweet chocolate chips over low heat.
  2. Cool the melted chocolate for 5 minutes.
  3. Blend in the beaten egg and sifted powdered sugar until well combined.
  4. Stir in the miniature marshmallows and chopped walnuts until coated.
  5. On waxed paper, shape the flaked coconut into a 16 x 8-inch rectangle.
  6. Roll the coconut rectangle in the mixture to form a log, coating completely.
  7. Chill the log for several hours or overnight for best results.
  8. Cut into 1/4-inch slices to serve.
