Instructions

  1. Bring water to a boil in a large saucepan.
  2. Add rice, cover, and cook until tender.
  3. Drain rice, rinse with cold water, and set aside.
  4. Place 1 quart of milk, sugar, salt, and raisins in a double boiler and heat slowly.
  5. Blend cornstarch with the remaining half cup of milk.
  6. Beat eggs until light.
  7. Add vanilla to eggs, then stir into the cornstarch mixture.
  8. Slowly add the cornstarch mixture to the milk mixture in the double boiler, cooking and stirring until the mixture coats the back of a spoon.
  9. Remove from heat and fold in the cooked rice.
  10. Chill before serving, optionally topped with whipped cream.
