Raisin sauced beets combine tender beets with a sweet and tangy raisin glaze, offering a flavorful side perfect for holiday dinners or everyday meals.

Ingredients

  • 2 cups sliced beets
  • 1/3 cup raisins
  • 1/4 cup sugar
  • 1 teaspoon cornstarch
  • 3 tablespoons lemon juice
  • 2 tablespoons butter

Instructions

  1. Drain the beets, reserving 1/3 cup of the liquid.
  2. In a medium saucepan, combine the reserved beet liquid and raisins.
  3. Cover the saucepan.
  4. Simmer until the raisins are plump, about 5 minutes.
  5. In a small bowl, mix sugar and cornstarch.
  6. Stir the sugar and cornstarch mixture into the raisins in the pan.
  7. Add lemon juice and butter.
  8. Cook and stir over medium heat until slightly thickened.
  9. Stir in the beets and simmer until the mixture is heated through, about 5 minutes.
