Lemon Pecan Fruit Cake

Ingredients

  • 1 box brown sugar
  • 1 lb. oleo or butter
  • 6 egg yolks
  • 2 c. plain flour
  • 1 Tbsp. baking powder
  • 2 oz. lemon extract
  • qt. chopped pecans
  • 1/2 lb. candied pineapple
  • 1/2 lb. candied cherries
  • 2 c. plain flour

Instructions

  1. Cream together sugar and oleo until smooth.
  2. Add beaten egg yolks and mix well.
  3. Combine 2 cups flour and baking powder.
  4. Add the flour mixture to the creamed mixture and mix thoroughly.
  5. Add lemon extract and mix well.
  6. Coat chopped pecans, candied pineapple, and candied cherries with the remaining 2 cups flour.
  7. Fold the coated nuts and fruits into the batter.
  8. Gently fold in the beaten egg whites.
  9. Cover the batter and let stand overnight.
  10. Next day, pour the batter into a floured and greased tube pan.
  11. Bake at 250°F (121°C) for 2 1/2 hours.
