Ingredients

  • 3/4 cup solid vegetable shortening
  • 1/4 cup sugar
  • 2 eggs
  • 1 2/3 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 (.4 oz.) package Hidden Valley Ranch buttermilk ranch salad dressing mix
  • 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine solid vegetable shortening and sugar.
  3. Add beaten eggs to the mixture; mix well and set aside.
  4. In a medium bowl, stir together all-purpose flour, quick-cooking oats, baking powder, baking soda, ranch salad dressing mix, and chopped nuts.
  5. Add dry ingredients alternately with buttermilk to the egg mixture, stirring until just combined.
  6. Spoon batter into greased or paper-lined muffin pans, filling each cup two-thirds full.
  7. Bake until a toothpick inserted into the center comes out clean, about 15 to 20 minutes.
