Ingredients

  • 6 slices bacon
  • 2 Tbsp chopped onion
  • 3/4 cup grated Velveeta cheese
  • 1 (4 1/2 oz) jar sliced mushrooms
  • 2 (12 oz) cans Mexican corn

Instructions

  1. Fry bacon until cooked but not brown, then drain excess fat.
  2. Stir in drained sliced mushrooms and chopped onions, and sauté until the onion is tender.
  3. Add drained Mexican corn to the skillet and heat through.
  4. Sprinkle grated Velveeta cheese over the mixture and cook until the cheese is melted.
