Ingredients

  • 2 boxes frozen raspberries
  • 2 Tbsp cornstarch
  • 2 Tbsp cold water
  • 32 large marshmallows
  • 1/2 cup boiling water
  • 1 cup whipped cream
  • 1/4 cup sugar
  • 1 small box vanilla wafers

Instructions

  1. Mix thawed raspberries with 2 tablespoons cornstarch that has been moistened with 1 tablespoon cold water.
  2. Place the raspberry mixture over low heat and cook until thick, stirring constantly. Let cool.
  3. Soften marshmallows in 1/2 cup boiling water until melted, then mix with whipped cream.
  4. Arrange vanilla wafers in the bottom of a serving dish.
  5. Pour the cooled raspberry mixture over the wafers.
  6. Top with the marshmallow and whipped cream mixture.
  7. Chill before serving.
