Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. light cream
  • 1/2 c. vegetable oil
  • 1 tsp. lemon extract
  • 1 1/2 c. fresh or frozen raspberries

Instructions

  1. In a large bowl, combine flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together eggs, cream, vegetable oil, and lemon extract.
  3. Pour the wet ingredients into the dry ingredients and stir just until moistened.
  4. Fold in the raspberries gently.
  5. Spoon the batter into 18 greased or paper-lined muffin cups.
  6. Bake at 400°F (200°C) for 18 to 20 minutes or until the muffins are golden brown.
