Ingredients

  • 6 cups fresh raspberries
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 8 ounces cream cheese
  • 1 cup whipped topping
  • 1 cup confectioners sugar
  • 1 (9-inch) graham cracker crust

Instructions

  1. Mash about 2 cups of raspberries to measure 1 cup and place in a saucepan.
  2. Add sugar, cornstarch, and water to the saucepan.
  3. Bring to a boil, stirring constantly, then cook and stir for 2 minutes longer.
  4. Strain the raspberry mixture to remove seeds if desired.
  5. Cool the sauce to room temperature, about 20 minutes.
  6. Meanwhile, beat cream cheese, whipped topping, and confectioners sugar in a mixing bowl to make the filling.
  7. Spread the filling in the bottom of the graham cracker crust.
  8. Top with the remaining raspberries.
  9. Pour the cooled raspberry sauce over the top of the pie.
  10. Refrigerate until set, about 3 hours.
