Raspberry Swirls are delightful cookies with a cinnamon-spiced dough and raspberry filling, perfect for those who enjoy sweet, fruity baked treats with a hint of spice.

Ingredients

  • 3 beaten eggs
  • 2 cups brown sugar
  • 1 teaspoon soda
  • 1 cup oleo
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 4 cups flour

Instructions

  1. Mix the first six ingredients together, then work in the flour. Refrigerate for 2 hours.
  2. Prepare the filling ingredients and set aside.
  3. Roll out the dough (half at a time) as for a jelly roll.
  4. Spread half the filling on the rolled dough and roll up.
  5. Refrigerate the rolled dough overnight.
  6. Slice into 1/2 inch thick pieces and bake on a greased sheet at 350°F.
  7. Do not overbake.
