Ingredients

  • 1/3 cup Crisco or Wesson oil
  • 2 eggs, beaten
  • 1 tablespoon sugar
  • 1 1/2 cups self-rising cornmeal
  • 1/2 cup self-rising flour
  • 1 1/2 cups buttermilk
  • 1/2 cup boiling water

Instructions

  1. Preheat oven to 450°F.
  2. Put Crisco or Wesson oil in an iron skillet and heat in the hot oven or use a 13 x 9-inch aluminum pan.
  3. Beat eggs in a small bowl, adding sugar.
  4. Put cornmeal, flour, and buttermilk in a mixing bowl.
  5. Stir, mixing thoroughly.
  6. Add hot oil and stir in well.
  7. Add boiling water.
  8. Mix well until batter is thin.
