Ingredients

  • 1 1/4 cups flour
  • 2 tablespoons flour
  • 1/2 cup sugar
  • 1/2 cup margarine
  • 1/3 cup raspberry jam
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla
  • 1/8 teaspoon baking soda

Instructions

  1. Combine 1 1/4 cups flour and granulated sugar in a medium bowl.
  2. Cut margarine into the mixture until it resembles coarse crumbs.
  3. Press into the bottom of a lightly greased 9 x 9-inch baking pan.
  4. Bake at 350°F for 20 minutes or until edges are lightly golden.
  5. Remove from oven; spread raspberry jam over the shortbread.
  6. In a medium bowl, beat eggs, brown sugar, and vanilla until creamy.
  7. Combine 2 tablespoons flour, salt, and baking soda; add to the egg mixture and blend.
  8. Stir in chopped walnuts.
  9. Spoon over jam, spreading lightly to the corners of the pan.
  10. Bake at 350°F for an additional 20 to 25 minutes or until the top is set.
  11. Cool in the pan.
  12. Cut into bars.
