Delightful raspberry yo-yos are sweet, tender cookies filled with raspberry preserves and rolled in shredded coconut, perfect for cookies exchanges or a charming treat for guests.

Ingredients

  • 1 cup butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1 tablespoon milk
  • 3 1/4 cups flour
  • 1/4 teaspoon salt

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add egg, milk, and vanilla; mix well.
  3. Combine flour, baking powder, and salt; gradually add to the creamed mixture and mix until a soft dough forms.
  4. Shape dough into 1-inch balls and place on a cookie sheet, pressing down slightly.
  5. Bake at 350°F for 20 minutes or until lightly golden.
  6. Allow cookies to cool completely.
  7. Spread raspberry preserves between two cookies to form a sandwich.
  8. Let the preserves squeeze out of the sides.
  9. Roll the sides of the filled cookies in shredded coconut to coat.
