Ingredients

  • 1 cup rolled oats
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup chopped dates
  • 1/4 teaspoon ground nutmeg
  • 1 (16 oz) can pumpkin puree
  • 1/4 teaspoon ground allspice
  • 1 cup honey
  • 1 cup unsweetened applesauce
  • 2 teaspoons cream of tartar
  • 2 egg whites
  • 1 cup raisins
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In large mixing bowl, combine oats, flour, baking soda, cream of tartar, cinnamon, ginger, cloves, nutmeg, and allspice.
  3. In medium bowl, mix honey, applesauce, pumpkin puree, and 2 unbeaten egg whites.
  4. Gently stir the wet mixture into the dry ingredients and mix until just blended.
  5. Stir in raisins and chopped dates.
  6. Gently fold in 2 lightly beaten egg whites.
  7. Pour batter into a greased or parchment-lined baking pan.
  8. Bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean.
