Pumpkin Delight Cake

Ingredients
- 1 cup rolled oats ⓘ
- 2 cups whole wheat pastry flour ⓘ
- 2 teaspoons baking soda ⓘ
- 2 teaspoons cinnamon ⓘ
- 1/2 teaspoon ground ginger ⓘ
- 1/2 cup chopped dates ⓘ
- 1/4 teaspoon ground nutmeg ⓘ
- 1 (16 oz) can pumpkin puree ⓘ
- 1/4 teaspoon ground allspice
- 1 cup honey ⓘ
- 1 cup unsweetened applesauce ⓘ
- 2 teaspoons cream of tartar ⓘ
- 2 egg whites ⓘ
- 1 cup raisins
- 1/4 teaspoon ground cloves ⓘ
Instructions
- Preheat oven to 325°F (163°C).
- In large mixing bowl, combine oats, flour, baking soda, cream of tartar, cinnamon, ginger, cloves, nutmeg, and allspice.
- In medium bowl, mix honey, applesauce, pumpkin puree, and 2 unbeaten egg whites.
- Gently stir the wet mixture into the dry ingredients and mix until just blended.
- Stir in raisins and chopped dates.
- Gently fold in 2 lightly beaten egg whites.
- Pour batter into a greased or parchment-lined baking pan.
- Bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean.
