Ravioli Vegetable Casserole

A hearty vegetable casserole featuring tender eggplant and zucchini topped with savory beef ravioli, sautéed onions, and Parmesan cheese, perfect for comforting family dinners.

Ingredients

  • 1 medium eggplant
  • 2 medium zucchini
  • 6 Tbsp. salad oil
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1 medium onion
  • 1 (15 1/2 oz.) can beef ravioli
  • 2 Tbsp. Parmesan cheese

Instructions

  1. Trim and slice eggplant and zucchini.
  2. Combine flour and salt. Coat eggplant and zucchini with seasoned flour; fry in hot oil until tender and slightly browned, adding oil if necessary.
  3. Place vegetables in the bottom of a casserole.
  4. Saute onion in remaining oil.
  5. Top eggplant and zucchini with onion and beef ravioli.
  6. Sprinkle cheese over the casserole.
  7. Bake at 375° for 25 minutes.
