Ingredients

  • 3 eggs
  • 1 12 cups applesauce
  • 1 12 cups sugar
  • 3 cups brown rice flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 3 cups apples, raw, peeled and diced
  • 1 cup walnuts
  • 12 cup raisins
  • 12 cup coconut

Instructions

  1. Mix applesauce and sugar.
  2. Add eggs, salt, flour, soda, cinnamon and baking powder.
  3. Mix well.
  4. Add apples, walnuts, raisins and coconut.
  5. Bake in greased 9X13 baking pan.
  6. Bake 350 degrees for 1 hour or so till center is done.
  7. Cool and add icing if desired.
