Ingredients

  • 1 lb. red beans
  • 1 onion
  • 1 garlic clove
  • 1/4 tsp. thyme
  • 2 qt. water
  • 1 lb. ham or salt meat
  • 1/2 tsp. pepper
  • 1/4 tsp. red pepper
  • 1 tsp. salt
  • 2 c. cooked dry rice

Instructions

  1. Wash beans and soak overnight or for 4 to 5 hours in cold water. Drain the water.
  2. Place beans in a pot and cover with cold water. Heat slowly.
  3. Add seasonings, ham or salt meat, chopped onion, and garlic to the pot. Bring to a boil.
  4. Simmer for at least 2 hours or until beans are tender.
  5. Add cooked dry rice to the bean mixture.
  6. Mix well and let steam for 10 minutes before serving.
