Ingredients

  • desired quantity of beets
  • 3 c. vinegar
  • 4 c. sugar
  • 1/2 c. salt
  • 2 c. water
  • a few whole cloves

Instructions

  1. Wash, cook, and skin the beets carefully to prevent bleeding, then cut them into desired sizes.
  2. Bring vinegar, sugar, salt, water, and whole cloves to a boil in a saucepan.
  3. Add the prepared beets to the boiling mixture and simmer for a few minutes to infuse flavors.
  4. Seal the hot beets and pickling liquid in clean, warm jars and store.
