  1. Wash dandelion blossoms and boil in water for 3 minutes.
  2. Strain, reserving 3 cups of liquid.
  3. Discard blossoms.
  4. Combine the reserved liquid, powdered fruit pectin, and lemon extract in a large heavy saucepan.
  5. Stir over medium heat until almost boiling.
  6. Blend in sugar and bring to a rolling boil.
  7. Boil for 3 minutes.
  8. Pour into sterilized 1/2-pint jars.
  9. Seal at once with paraffin or cover and refrigerate to store.
