Ingredients

  • 4 bell peppers, chopped
  • 2 leeks (whites only), chopped
  • 1 medium onion, chopped
  • 3 Tbsp. butter
  • 2 c. chicken broth
  • 2 c. whipping cream
  • salt to taste

Instructions

  1. Saute chopped bell peppers, leeks, and onion in butter until the onion is transparent.
  2. Add chicken broth and whipping cream to the saucepan.
  3. Simmer the mixture for 30 minutes.
  4. Puree the soup in a blender until smooth.
  5. Return the pureed soup to the saucepan and simmer for an additional 15 minutes.
  6. Remove from heat and season with salt to taste.
