Ingredients
- 2 Tbsp. butter
- 1 c. chopped onion ⓘ
- 1 medium green pepper, chopped ⓘ
- 1 medium red pepper, chopped ⓘ
- 1 stalk celery, chopped ⓘ
- 1 clove garlic, minced ⓘ
- 1 (14 1/2 oz.) can chicken broth ⓘ
- 2 Tbsp. tomato paste ⓘ
- 1 Tbsp. brown sugar ⓘ
- 1/2 tsp. cayenne pepper ⓘ
- 1/2 tsp. ground pepper ⓘ
- 1 lb. shrimp, shelled and deveined ⓘ
- 3 c. hot, cooked rice
- 1 lb. bay scallops ⓘ
- 1/4 c. unbleached white flour ⓘ
- 3 cloves garlic, minced ⓘ
- 3 Tbsp. olive oil ⓘ
- 2 c. snow peas ⓘ
- 2 c. sliced red pepper ⓘ
Instructions
- Rinse scallops and dry with a paper towel.
- Roll scallops in flour.
- In a wok or large skillet, sauté scallops and minced garlic in olive oil until tender, about 5 to 10 minutes.
- Add snow peas, sliced red peppers, and chopped mushrooms; cook until heated through.
- Serve the seafood mixture over hot, cooked rice.
