Red Sea Clam Chowder

Ingredients

  • 6 slices bacon, diced
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1 clove garlic, minced
  • 1 (28 oz.) can tomatoes
  • 1 c. water
  • 1 (12 oz.) can V-8 juice
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. large shell macaroni
  • 2 (6 1/2 oz. each) cans chopped clams

Instructions

  1. Saute bacon for 5 minutes.
  2. Add onion, celery and garlic. Cook until bacon is brown.
  3. Pour off most of the excess fat.
  4. Add tomatoes, V-8, salt and pepper. Bring to boil.
  5. Stir in shell macaroni.
  6. Cover and cook 12 minutes, stirring once.
  7. Add clams and parsley.
  8. Simmer 5 minutes.
  9. Serves 6.
