Ingredients

  • 1 Tbsp. baking powder
  • 1 cup sugar
  • 2 cups flour
  • 3 egg whites
  • 1/2 cup oil
  • 3/4 cup skim milk
  • 1 tsp. vanilla

Instructions

  1. Combine flour, baking powder, and 3/4 cup sugar in a bowl.
  2. Beat egg whites gradually adding 1/4 cup sugar until stiff peaks form.
  3. Combine oil, 3/4 cup skim milk, and vanilla in a separate bowl.
  4. Make a well in the dry ingredients and add the liquid mixture.
  5. Beat for 1 minute at medium speed; add remaining milk and beat another minute.
  6. Carefully fold egg whites into the cake batter.
  7. Divide batter into 2 layer cake pans coated with cooking spray.
  8. Bake at 375°F (190°C) for 30 minutes or until the cake springs back.
  9. Cool for 10 minutes before removing from the pans.
