Ingredients

  • 8 slices white bread
  • 5 cups diced rhubarb
  • 3/4 cup brown sugar
  • 3/4 to 1 cup white sugar
  • 4 eggs
  • 1/2 cup raisins
  • cinnamon
  • nutmeg

Instructions

  1. Mix the brown sugar and white sugar together.
  2. Layer the bread pieces, half the diced rhubarb, and half the sugar mixture into a greased 2-quart casserole dish.
  3. Sprinkle with cinnamon, nutmeg, and raisins.
  4. Repeat the layering, ending with bread on top.
  5. Pour hot milk evenly over the layered ingredients.
  6. Beat the eggs slightly and pour over the casserole.
  7. Bake at 350°F for about 1 hour until golden and set.
