Ingredients

  • 1/2 cup sugar
  • 2 cups finely cut rhubarb
  • 1/2 cup shortening
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda

Instructions

  1. Mix sugar and finely cut rhubarb and set aside.
  2. In a large bowl, cream shortening, brown sugar, and white sugar.
  3. Add eggs and vanilla, then sift together the flour, cinnamon, salt, and baking soda.
  4. Gradually add dry ingredients to the creamed mixture and mix well.
  5. Pour batter into a greased 9 x 13-inch pan.
  6. Bake at 350°F for 45 minutes or until a toothpick inserted into the center comes out clean.
