Ingredients

  • 1/4 cup shortening
  • 1 egg
  • 1 cup milk
  • 2 to 4 cups rhubarb

Instructions

  1. Mix flour, baking powder, sugar, salt, shortening, egg, and milk together to form a batter.
  2. Spread half of the batter into a 1-quart baking dish.
  3. Add rhubarb and 1 1/2 cups sugar over the batter.
  4. Spread the remaining batter on top of the rhubarb layer.
  5. Bake at 350°F until bubbly and golden, about 40 minutes.
