Ingredients

  • 3 cups finely chopped rhubarb
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup oleo
  • 2 eggs
  • 1/2 teaspoon soda
  • 1/2 cup sour milk
  • 2 1/2 cups flour

Instructions

  1. Put the chopped rhubarb in a heavy iron skillet or pan and sprinkle with brown sugar.
  2. Mix the sugar and oleo, then add eggs, baking soda, and sour milk to form a batter.
  3. Add the flour gradually to the batter until it reaches a cake-like consistency.
  4. Pour the batter over the rhubarb in the skillet.
  5. Bake at 350°F (175°C) for 30 minutes.
  6. Once baked, turn the skillet upside-down so the rhubarb is on top before serving.
