Ingredients

  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 3 cups fresh rhubarb, chopped
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups oatmeal
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup butter or margarine, melted
  • 1/3 cup all-purpose flour

Instructions

  1. Combine sugar and cornstarch in a bowl.
  2. Add rhubarb and strawberries; mix well.
  3. Spoon the fruit mixture into an 8-inch square baking dish.
  4. In a separate bowl, combine oatmeal, brown sugar, melted butter, flour, and cinnamon; mix until the mixture resembles coarse crumbs.
  5. Sprinkle the streusel over the fruit mixture.
  6. Bake in a preheated oven at 350°F for 30 minutes or until golden and bubbly.
