- About 1 hour before serving, preheat oven to 350°F.
- In a 1 1/2-quart casserole, dissolve bouillon cubes in boiling water, stirring until fully dissolved.
- In a medium skillet, heat margarine over medium heat and sauté rice for 5 minutes or until golden brown, stirring constantly.
- Add the toasted rice to the broth in the casserole.
- Add rice, chopped celery, sliced mushrooms, salt, and black pepper to the casserole.
- Cover and bake for 40 minutes, stirring occasionally.
- Remove the lid and cook for an additional 5 minutes.
