Ingredients

  • 2 beef bouillon cubes
  • 2 1/2 cups boiling water
  • 2 tablespoons margarine
  • 1 cup raw rice
  • 1 cup chopped celery
  • 1/2 pound fresh mushrooms sliced or 1 small can mushrooms
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. About 1 hour before serving, preheat oven to 350°F.
  2. In a 1 1/2-quart casserole, dissolve bouillon cubes in boiling water, stirring until fully dissolved.
  3. In a medium skillet, heat margarine over medium heat and sauté rice for 5 minutes or until golden brown, stirring constantly.
  4. Add the toasted rice to the broth in the casserole.
  5. Add rice, chopped celery, sliced mushrooms, salt, and black pepper to the casserole.
  6. Cover and bake for 40 minutes, stirring occasionally.
  7. Remove the lid and cook for an additional 5 minutes.
