Ingredients

  • 1 cup pea beans
  • 1 clove garlic
  • 1/4 pound salt pork
  • red pepper to taste
  • black pepper to taste

Instructions

  1. In a covered pan, bring the peas to a boil until the skins start to crack.
  2. Drain the peas.
  3. Add water to cover the peas.
  4. Add garlic to the pan.
  5. Heat a large knife on fire until hot.
  6. Bang and fold the salt pork until it becomes a paste texture, keeping the knife hot.
  7. Add the salt pork to the peas.
  8. Add black and red pepper to taste.
  9. Add a dash of salt if desired.
  10. Simmer for 1 1/2 hours.
  11. Add the rice to the peas and salt pork mixture.
  12. Cook for an additional 25 minutes until the rice is tender.
