Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 cup chopped onions
  • 1 (10 oz) can tomatoes with green chilies
  • 1 cup beef broth
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup sour cream
  • 1 cup grated Monterey Jack cheese

Instructions

  1. Crumble ground beef in a lightly buttered casserole dish.
  2. Sprinkle the uncooked rice and chopped onions evenly over the beef.
  3. Combine tomatoes with green chilies, beef broth, salt, and garlic powder in a saucepan.
  4. Heat the mixture until boiling.
  5. Pour the hot tomato mixture over the meat and rice in the casserole.
  6. Cover the casserole and bake at 350°F for 1 hour.
  7. Stir in sour cream after baking.
  8. Sprinkle grated Monterey Jack cheese on top.
  9. Return to the oven and bake for an additional 5 minutes until cheese melts.
