Ingredients

  • 1 lb ground beef or turkey
  • 1/2 cup chopped onion
  • 30 oz prepared spaghetti sauce
  • 15 oz low-fat part skim Ricotta or cottage cheese
  • 2 cups shredded low-fat part skim Mozzarella cheese
  • 2 egg whites
  • 3 cups cooked long grain rice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a 9 x 13-inch pan with nonstick cooking spray.
  3. In a medium skillet, brown ground beef or turkey with chopped onion; drain excess fat.
  4. Stir in prepared spaghetti sauce and mix well.
  5. In a small bowl, combine Ricotta or cottage cheese, shredded mozzarella cheese, and egg whites; mix thoroughly.
  6. Spread 1/3 of the meat sauce in the prepared pan.
  7. Add half of the cooked rice over the sauce.
  8. Spread half of the cheese mixture over the rice.
  9. Repeat the layers: top with remaining meat sauce, rice, and cheese mixture.
  10. Spread the remaining sauce on top and sprinkle with Parmesan cheese.
  11. Bake at 350°F (175°C) for 30 to 35 minutes until hot and bubbly.
  12. Let stand for 10 minutes before serving.
