Ingredients

  • 1 Tbsp. margarine
  • 1 green pepper, chopped
  • 1/2 cup sliced, pitted, ripe olives
  • 1 envelope Italian style dressing mix
  • 1 bag Success 10-Minute brown rice, cooked
  • 1 cup shredded skim mozzarella cheese
  • 1 garlic clove, minced
  • 1 can Italian style tomatoes

Instructions

  1. Cook and stir chopped green pepper and minced garlic in margarine until tender.
  2. Add Italian style tomatoes and Italian dressing mix, then simmer for 10 minutes.
  3. Stir in cooked brown rice and top with shredded mozzarella cheese.
  4. Sprinkle sliced olives over the dish before serving.
