Ingredients

  • 16 oz. can crushed pineapple
  • 3 1/2 oz. pkg. instant vanilla pudding mix
  • 3 cups cooked rice
  • 2 cups miniature marshmallows
  • 1 cup chopped pecans, divided

Instructions

  1. Combine crushed pineapple with liquid and instant vanilla pudding mix.
  2. Stir well until the mixture is smooth.
  3. Add cooked rice and miniature marshmallows to the mixture.
  4. Add 1/2 cup of chopped pecans and fold in Cool Whip.
  5. Pour the mixture into a 12 x 8 x 2-inch Pyrex dish.
  6. Sprinkle the remaining pecans on top.
  7. Chill the dish for several hours or overnight before serving.
