Ingredients

  • 1 cup rice
  • 1 cup water
  • 5 cups milk
  • 2 eggs, beaten
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter
  • 1/3 cup slivered almonds
  • 1/3 cup raisins
  • 1 teaspoon salt

Instructions

  1. Cook rice and 1 cup boiling water with salt in the top of a boiler. Bring to a boil and cook for 15 minutes.
  2. Add milk and simmer for 45 minutes.
  3. Stir the cooked rice slowly into beaten eggs; then add remaining ingredients.
  4. Pour the mixture into a casserole dish.
  5. Set the casserole in hot water and bake in a hot oven at 400°F for 45 minutes.
  6. Serve warm or chilled. Eggs can be omitted, and the mixture served without further baking.
