Ingredients

  • 3 cups beef stock or chicken broth
  • 1 1/2 cups long grain white rice
  • 1 stick butter
  • 1/3 cup pine nuts or pecans
  • 1/3 cup golden raisins

Instructions

  1. Bring beef or chicken broth to a boil.
  2. Add rice and 2 tablespoons of butter. Cover and simmer for 20 minutes until liquid is absorbed.
  3. Heat remaining butter until slightly bubbly.
  4. Add pine nuts or pecans and sauté until lightly browned.
  5. Pour nuts and butter over the cooked rice.
  6. Add golden raisins and fluff the mixture with a fork.
  7. Cover and let stand for 5 minutes before serving.
