Ingredients

  • 2 slices bacon, chopped
  • 1 rib celery
  • salt
  • 1/2 onion
  • 2 to 3 strips green pepper
  • tomato, if desired
  • 1 cup rice
  • 2 cups water or chicken broth

Instructions

  1. Fry the chopped bacon in a skillet until crispy.
  2. Add chopped celery, half an onion, green pepper strips, and tomato (if desired) to the bacon and sauté until vegetables are tender.
  3. Add the rice to the skillet and cook until it starts to brown with the bacon and vegetables.
  4. Pour in water or chicken broth, then cover the skillet.
  5. Bring to a boil, then reduce heat to low and simmer for 20 minutes until rice is cooked and liquid is absorbed.
