Ingredients

  • 3 cups sugar
  • 1 cup butter, softened
  • 1 cup shortening
  • 7 egg yolks
  • 3 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 cup milk
  • 1 ounce coconut extract
  • 7 egg whites, stiffly beaten
  • 1 cup coconut

Instructions

  1. Cream sugar, butter, and shortening in a large mixer bowl until light and fluffy.
  2. Add egg yolks; beat well.
  3. Sift flour, baking powder, and salt together.
  4. Add to the creamed mixture alternately with milk, beating well after each addition.
  5. Add coconut extract; mix well.
  6. Fold in egg whites and coconut.
  7. Pour into a greased and floured 10-inch tube pan.
  8. Place in a cold oven.
  9. Set oven temperature to 325°F.
  10. Bake for 1 1/2 hours.
  11. Cool in the pan for several minutes.
  12. Invert onto a serving plate.
  13. Drizzle glaze over the top and side of the cake.
