Ingredients

  • 8 to 10 potatoes
  • 1 cup whipping cream
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion, chopped
  • 1/2 cup grated Swiss cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. Bake potatoes using a microwave or other method until tender.
  2. Peel and chop the cooked potatoes as for potato salad.
  3. In a saucepan, cook chopped onions in butter until translucent.
  4. Add whipping cream, milk, salt, and pepper to the onions and cook until the mixture thickens.
  5. Combine the cooked potatoes with the cream mixture and cook until heated through.
  6. Pour the potato mixture into a buttered dish.
  7. Cover the top with grated Swiss cheese and Parmesan cheese.
  8. Optionally, drizzle melted butter on top.
  9. Bake at 350° to 375°F for 15 to 30 minutes until bubbly and golden.
