Ingredients

  • 1/2 cup pumpkin
  • 1 large egg
  • 1/2 cup milk
  • 1/2 stick butter, melted
  • 1/2 cup drained crushed pineapple
  • 2 teaspoons baking powder
  • 1 1/2 cups sifted flour
  • 2/3 cup sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup brown sugar

Instructions

  1. In a large bowl, combine egg, pumpkin, milk, melted butter, drained crushed pineapple, sifted flour, sugar, baking powder, salt, cinnamon, and nutmeg; mix well.
  2. Spoon batter into buttered muffin tins, filling almost to the top.
  3. Sprinkle each muffin with brown sugar.
  4. Bake at 425°F for 20 to 25 minutes until golden and cooked through.
