Ingredients

  • 8 chicken tenderloins
  • salt and pepper
  • 2 Tbsp butter
  • 5 stalks celery, sliced
  • 1 small onion, diced
  • 2 Tbsp flour
  • 1 Tbsp butter
  • 2 cups chicken broth

Instructions

  1. Sprinkle the chicken tenderloins with salt and pepper.
  2. Brown the chicken in a skillet with 2 tablespoons of butter for about 5 minutes per side. Remove from skillet.
  3. In the same skillet, cook the sliced celery and diced onion until tender; remove and set aside.
  4. Add 2 tablespoons of flour and 1 tablespoon of butter to the skillet.
  5. Stir over medium heat until a paste forms.
  6. Gradually add the chicken broth, bringing to a boil while stirring constantly.
  7. Stir in the cooked celery and onion into the broth.
  8. Layer cooked rice in the casserole dish.
  9. Place the browned chicken tenderloins over the rice.
  10. Pour the thickened celery broth over the chicken and rice.
  11. Cover the casserole and bake at 350°F for 1 hour.
