Creamy ricotta cheese balls infused with spinach and Parmesan, coated in flour, cooked until floating, then baked with marinara sauce for a savory, cheesy appetizer or main dish.

Ingredients

  • 1 lb. ricotta cheese, drained
  • 1 cup plain bread crumbs
  • 4 eggs, well beaten
  • 1 cup grated Parmesan cheese
  • 10 oz. frozen chopped spinach, drained and squeezed dry
  • flour (for coating balls)
  • marinara sauce

Instructions

  1. Mix ricotta cheese, bread crumbs, beaten eggs, Parmesan cheese, and drained chopped spinach in a large bowl.
  2. Form the mixture into meatball-sized balls and roll each in flour.
  3. Place the coated balls on a flat dish, cover, and refrigerate for 1 hour or overnight.
  4. Bring a pot of salted water to a boil, and cook the balls in boiling water for 5 to 7 minutes until they float on top.
  5. Transfer the cooked balls to a casserole dish, cover with marinara sauce, and bake at 350°F (175°C) for 20 to 30 minutes.
