Ingredients

  • 1 garlic clove, chopped
  • 1 small yellow onion, diced
  • 2 Tbsp. olive oil
  • 2 ripe tomatoes, diced
  • 1/2 lb. thin sliced pepperoni
  • 1/4 c. whipping cream
  • salt and pepper to taste
  • 1/2 lb. rigatoni, cooked al dente
  • Parmesan cheese for topping

Instructions

  1. Saute garlic and onion in olive oil until they become clear.
  2. Add diced tomatoes and sliced pepperoni to the pan.
  3. Saute until the tomatoes cook down slightly, about 3 minutes.
  4. Add whipping cream, salt, and pepper to the mixture.
  5. Toss the sauce with cooked al dente rigatoni.
  6. Top with Parmesan cheese and serve.
