Ingredients

  • 4 ripe cucumbers, diced
  • 4 sweet red peppers
  • 8 small onions
  • 2 Tbsp salt
  • 3 cups sugar
  • 1 tsp turmeric
  • vinegar
  • pickling spice
  • cloves
  • stick of cinnamon

Instructions

  1. Mix together the diced cucumbers, sweet red peppers, onions, and salt in a large bowl.
  2. Let the mixture sit overnight to soften and develop flavor.
  3. In a saucepan, combine sugar, turmeric, vinegar, pickling spice, cloves, and a cinnamon stick.
  4. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes to make the pickling syrup.
  5. Pour the hot syrup over the cucumber mixture, ensuring everything is well coated.
  6. Transfer the mixture into sterilized jars and seal.
  7. Allow the pickles to sit for at least a week before tasting for optimal flavor development.
