- Roll out the bottom pastry crust and fit it into a 9-inch pie pan.
- Bake the coarsely crushed Ritz crackers in the pastry-lined pan until lightly toasted.
- Combine water, sugar, and cream of tartar in a saucepan and boil gently for 15 minutes to make the syrup.
- Add lemon juice and grated lemon rind to the syrup and allow to cool.
- Pour the cooled syrup over the crushed crackers in the pie shell.
- Dot generously with butter and sprinkle with cinnamon, then cover with the top crust.
- Trim and flute the edges to seal the pie.
- Cut slits in the top crust to allow steam to escape.
- Bake in a 425°F oven for 30 to 35 minutes until the crust is crisp and golden.
- Serve the pie warm.
